Living in Estate Pastory on St.John, Trinidad Charlie - or "Trini" as he is known to the locals - has carved a niche for himself with his ital brew of herbs and spices, papaya and peppers, to concoct one of the tastiest, mouth watering(and eye tearing) flavors in hot pepper sauces. Still blended, simmered and bottled in his home kitchen, Charlie himself says: "Each batch of sauce is unique in itself !"
